Vegan Omelette and Tofu Mix Recipe

Ingredients:

  • 1 cup diced tofu (you can use firm tofu or extra-firm tofu)
  • 1/4 cup cold water
  • 2 tablespoons nutritional yeast
  • 1 tablespoon vegetable oil (e.g., olive oil or coconut oil)
  • 1/2 teaspoon dried garlic powder
  • 1/2 teaspoon dried onion powder
  • 1/2 teaspoon salt (optional, adjust to taste)
  • Fresh meal vegetables (e.g., bell peppers, mushrooms, spinach, tomatoes, etc.), diced
  • Vegan cheese slices (optional)
  • Vegan sausage or veggie sausage (optional)
  • Fresh cilantro or parsley leaves (optional, for garnish)

Instructions:

  1. Before starting, gently press down on the diced tofu using a paper towel or cloth to remove excess moisture. This will help the omelette mixture bind better.
  2. In a large mixing bowl, combine the diced tofu, cold water, nutritional yeast, vegetable oil, dried garlic powder, dried onion powder, and salt. Stir until all ingredients are well combined. This mixture forms the base of the omelette.
  3. Heat a skillet and, if desired, grease it with vegetable oil or use a non-stick skillet.
  4. Pour the tofu mixture into the heated skillet and spread it evenly using a spatula. Then, add the diced fresh vegetables, vegan cheese (if using), and optional vegan sausage or veggie sausage.
  5. Cook the mixture over medium heat until it becomes golden brown on the bottom, which may take about 4-5 minutes for each side.
  6. Fold the omelette in half with a spatula and carefully flip it. Cook the other side until it’s golden brown as well.
  7. Transfer the cooked omelette to a serving plate and garnish it with fresh cilantro or parsley leaves.
  8. Serve hot and consider serving it with sliced bread or toast on the side.
